Miniature Mince Pies

Christmas for me this year is going to be all about two things: travelling and food. It just wouldn't be Christmas if I didn't spend 50% travelling between family members. But more importantly, I am very excited for the food. At no other time of year is it acceptable to have booze for breakfast and cake for dinner so this is a holiday I can definitely get behind. In a fit of madness I've volunteered to be the chef for the holiday period, including cooking Christmas dinner for the first time and I thought I'd make an early start on cooking ready for the big day by finally learning how to make one of my favourite winter foods, mince pies.

Chai and Chocolate Muffins

In recent years, I've been a bit obsessed with all things Chai. But after a quick google recently to find some chai recipes for winter, I was disappointed by how unnecessarily complicated many of them were. I was looking for something quicker, easier and that didn't require a trip to a specialist shop for a long list of spices.

Earl Grey and Lemon Cupcakes

The basis for this recipe comes from the Hummingbird Bakery from their Cake Days book. I first made these a while ago so when I had friends coming over for afternoon tea recently I couldn't think of a more suitable cake for the occasion. As usual, I did make a few small tweaks to the recipe (mostly the icing because some things just need to be accompanied by lemon) but I was very pleased with the end result.

Lemon and Lime Cake with White Chocolate Icing

So it was my birthday last week and obviously I couldn't let the day pass without cake - it later turned out that several other people had a similar idea, resulting in my having four different lots of cake by the end of the day (including this work of art), but I'm just classing that as a sign of a successful birthday.

Since what passes for Spring/Summer only arrived here a few weeks ago, I'm currently loving cooking anything with fruits or other nice fresh ingredients and thought lemon would be a nice change from a standard birthday cake. After much research into lemon and white chocolate cakes, I couldn't find one sole recipe that I liked the sound of so instead used a different one for each part of the cake and the result was actually pretty good.
